    Quick & Scrappy: Frito Pie

    I love shopping at Whole Foods and being a patron of local farmer’s markets and other do-gooder things that benefit my diet and health but lately I’ve been craving something that doesn’t have "organic" on the label and that something is Fritos.


    Now, I could just scarf down a bag of Fritos - no problem -  but if I’m going to indulge, why not take it to the next level? I’m talking cheese, chili, more cheese, sour cream, onions and cheese. Here’s one of my favorite recipes  – Frito Pie:

    I have to say this is the prettiest looking Frito Pie I’ve ever seen and mine looks nothing like this. Mine usually end up looking a lot more like this…

    Who am I kidding? That photo is probably still too generous. Hey, I’m just trying to help you adjust your expectations a bit. No matter what your Frito pie looks like – it will probably taste amazing. You’d really have to go out of your way to mess this up, as the recipe is practically fool-proof. You can do it! Just don’t be a fool.

    The What:
    1 cup Fritos 3/4 cup chili (I make my own but you can use Chili cans, I don't judge)
    1/4 cup shredded cheddar cheese 1 tablespoon chopped onions


    The How:
    Feel free to add in these optional ingredients: Jalapeno slices, chopped tomatoes, sour cream, salsa In a bowl, pour Fritos to cover the bottom of the dish. Ladle on hot chili, sprinkle with cheese and onions. Add any and all of your preferred toppings. Enjoy!

      Well down here in Texas, we use some rice as a base, then the fritos, then the chili, then the cheese! Yeah! Maybe some salsa....oh yeah...!

      I haven't had a Frito Pie in ages. I do admit I have lost the fondness for Fritos, however, it looks soo damn good right now

      I remember going to my brother little league games and getting Frito Pie at the concession stand. They'd pour chili in the fun size bags of fritos and it was the best thing on earth. I still love it to this day!!

      Um... Not wanting to sound iggerent. I don't actually know what a Frito is. Is it a Nacho? Some of us don't actually speak Septic.

      (Um, don't take offence. That is cockney rhyming slang fer Yank... Septic tank. Or at least it is where I grew up.)

      I've heard of Cheeto's. Are they similar? Yer on a multinational forum. Using national brand names are just gonna make the rest of us feel bad.

      I do a similar snack with Tostitos scoops. Not sure I could do the Fritos. I use Wendy's or Skyline chili, Ortega taco sauce, sour cream and cheddar. Who am I kidding...it's not a snack, it's a meal!

      Awesome! We always spice up our sour cream when we do Mexican. Add some fresh lime juice and fresh cilantro. You can also throw the SC in the food pressor with some canned chipotles in adobo.
