    My Lettuce Free Salad

    I eat a lot of lettuce-free salads because lettuce is like grass so eating it makes me feel like a cow. Give this one a try:

     

    The What:

    Corn (make use of that leftover corn on the cob)
    Avocado, sliced or cubed
    Dill, chopped
    Tomatoes, chopped
    Fancy green beans (aka French green beans, the long skinny ones)
    Lemon juice
    Shaved parmesan cheese (to taste… because I can’t help myself)
    And olive oil (I use O&Co's basil infused)

     

    The How:

    Throw the corn, avocado, dill, tomatoes, and green beans into a salad bowl. Use as much or as little as you’d like and depending on how many people you’d like to feed. If I make one just for myself, I’ll do about ½ cob of corn, ½ avocado, 1 tomato, a handful of green beans, and 2 sprigs of dill but you can divide up the portions however you’d like. 

    Drizzle the lemon juice and olive oil all over the salad, sprinkle with Parmesan cheese, and toss.

      Your welcome! I had a great salad for dinner tonight. Romaine leaves with crumpled bacon, chopped tomato, cucumber slices, shredded carrot, and feta cheese, with a blue cheese dressing. :)

      @Lizz: would you consider spinach to be like grass as well?

      @Elvira: Iceberg lettuce is boring, and ever floppy butter lettuce as well, but crispy romaine is great for all sorts of things. Also your page is an amazing collection of salads and salad like things. Do you eat like that every day?

      I'll try any salad that uses avocado. Our avocado tree is dropping like 10 a day into our yard. What a waste! :(

      Haha, this made me laugh. lettuce makes you feel like a cow... Do carrots make you feel like a rabbit? Thats what my brother always says! Well to him its all veggies btw ;)
      Lettuce is boring, but rucola (arugula) is good though!
