    WE’RE COOKIN: My Aunt Edwa’s Charleston Red Rice

    I recently had the pleasure of visiting with family in Edisto, South Carolina where my Aunt served up her Charleston Red Rice as an awesome side dish to some pretty yummy BBQ. She can't remember exactly where this recipe comes from - she doesn't claim it totally as her own - but she does guarantee it came from a true Charlestonian!

    Give it a try for your next family get-together—I guarantee a hit!

    (Serves 4 -you can double, using a larger casserole dish)


    Ingredients:
    1 cup Uncle Ben's converted rice (any long grain rice will do, but Uncle Ben's comes out fluffier)
    1 cup tomato juice
    2 slices bacon, fried crisp
    2 tablespoons bacon drippings
    1/8 teaspoon salt
    Freshly ground black pepper to taste (I use lots)
    2 teaspoons sugar
    1 small onion, chopped
    1 cup boiling water

    Directions:
    1. Preheat oven to 375F
    2. In a small casserole dish, mix rice, tomato juice, onion, bacon drippings, salt, pepper, and sugar.
    3. Just before placing in the oven, add the boiling water and stir once.
    4. Cover the casserole dish and bake for about 45 minutes. 
    5. Uncover and add crumbled bacon, stir slightly, then bake an additional 15 to 20 minutes until all liquid is absorbed. 
    6. Remove and enjoy!

    You can also cook it on top of the stove for twenty minutes, adding the bacon to the last 5 min or so.

      My family always have cook a similar receipt to this and it's very good¡¡ very tasty¡¡ But me and my family have a secret to do it still more tasty.

      We enjoy my Grandma's coleslaw recipe. I can't exactly explain how to make it as there are no measurements its all by sight and taste. I just know how to do it after years of watching her make it. I will try to share the recipe the best I can.

      one head of cabbage shredded(I cheat and by the bagged stuff)
      one jar of miracle whip or mayo your choice
      about 1/3 to 1/2 cup of sugar
      about 1/3 to 1/2 cup milk
      about 2T of celery seed

      mix miracle whip, sugar, milk, and celery seed together until well blended. pour over cabbage and combine together. refrigerate until ready to eat. Its really yummy and has been our family favorite whenever we have bbq. Hope you all try it and enjoy it.

      Looks Awesome! Will be trying next time I do BBQ. Here is a Carolina Sauce recipe I created a few years back.

      This is a thin BBQ sauce that is amazing on pulled pork (or chicken) sandwiches or even burgers. When serving with pork or chicken try and stay away from adding this to other bbq sauces. This version is perfect all by itself. The pepper flakes just add a slight amount of heat so if you like it hot than double to 2 tbsps. Enjoy!!

      2 cups apple cider vinegar
      1 cup ketchup
      3 tbsp turbano sugar (sugar in the raw)
      1 tbsp red pepper flakes
      1 tbsp mustard power
      1 tbsp molasses
      ½ tbsp fresh ground pepper
      1 tsp onion powder
      1 tsp salt

      Heat vinegar to a simmer and add all ingredients. Stir and simmer covered for 5 minutes than let stand on the stove with the heat off for 30 minutes. When cooled, store in plastic container (I use an empty salad dressing container) and store in the fridge. Let sit for a few days before using for best results. Will keep for months.
